A new concept is planned for a familiar Germantown address

A restaurant called TANA—short for “Taiwanese New Americans”—is being developed for 983 Goss Ave. in Louisville’s Germantown neighborhood, in the building that previously housed Eiderdown. The project is led by chef Ming Pu and co-owner Courtney Pu, with an opening targeted for spring 2026.

The operators have described the concept as a modern restaurant that draws on Taiwanese and regional Chinese flavors while applying contemporary American technique and presentation. Public-facing materials for the project also emphasize seasonality and sustainability as guiding ideas for the menu.

Chef and ownership details

Ming Pu’s résumé in the Louisville–Southern Indiana market includes roles at Asiatique, 502 Bar & Bistro, and at restaurants in New Albany, Indiana, including Brooklyn and the Butcher and The Exchange Pub & Kitchen. The Pus have said planning began in 2020 and accelerated after securing the lease in spring 2024.
